Chewy, nutty muesli bars bound with banana, butter, and honey.
- soak the dried fruit in hot boiling water (for soaking) so it becomes soft and juicy
- use any combination of mixed seeds (sunflower, pumpkin, chia, ground flax) you like, but keep the total weight similar
- the sweetness comes mainly from ripe banana and honey
- press the mix very firmly into the tin; otherwise the bars will crumble
- let the slab cool completely before cutting or removing from the form
Steps
- Finely chop the dried fruit and place it in a bowl. Pour over the boiling boiling water (for soaking) and let it soak for at least 1 hour. Then drain well.
- In a large mixing bowl, add the rolled oats, roughly chopped whole almonds (or cashews), the soaked and drained dried fruit, the mixed seeds (sunflower, pumpkin, chia, ground flax), and the shredded coconut (or coconut flakes).
- Mash the ripe banana with a fork until smooth and add it to the bowl.
- In a small saucepan, gently melt the butter together with the honey. Stir until combined, then pour this mixture over the dry ingredients in the bowl.
- Mix everything thoroughly until all ingredients are evenly coated and the mixture holds together when pressed.
- Line a baking tin with baking paper. Transfer the mixture into the tin and press it down very firmly, using your hands or a rolling pin over another sheet of baking paper.
- Bake at about 180 °C for roughly 15 minutes, until the surface is lightly golden.
- Let the baked slab cool completely in the tin, then lift it out and cut into bars.
